If Santa Claus isn't real, then why are there elves making toys at the North Pole?

It was recently pointed out to me that Jesus' existence and resurrection could be proved by the eyewitness testimony of the 12 Apostles. And it suddenly dawned on me that the existence of Santa Claus could be proved the same way. If Santa Claus wasn't real, what would cause all those elves make up such a incredulous lie?
